Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
  2. Remove from heat and let it cool.
  3. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  4. Once quinoa is cool, add it to the vegetable mixture.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve immediately or refrigerate until ready to serve.
