Ingredients

- 1 lb ground beef
- 1 cup diced pineapple
- 1 tbsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 small corn tortillas
- 1/2 cup chopped cilantro
- 1/4 cup diced red onion
- 1 lime, cut into wedges
Instructions
- Heat a skillet over medium heat and cook the ground beef until browned.
- Add smoked paprika, chili powder, cumin, salt, and black pepper. Stir well.
- Add diced pineapple and cook for 3-4 minutes until slightly caramelized.
- Warm the corn tortillas in a dry pan or microwave.
- Fill each tortilla with the beef and pineapple mixture.
- Top with chopped cilantro, diced red onion, and a squeeze of lime.
- Serve immediately.
Notes
- Use fresh pineapple for the best flavor.
- Adjust the spice level by adding more or less chili powder.
- For extra heat, add diced jalapeños.
