  • 1/4 cup lemon juice
  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon vanilla extract
  • 1 package fruit pectin (optional, for thicker jam)

Instructions

  1. In a large pot, combine the chopped plums, sugar, and lemon juice. Stir to combine and let sit for about 30 minutes to macerate.
  2. Add the ground cinnamon and nutmeg to the pot and mix well.
  3. Place the pot over medium heat and bring the mixture to a boil, stirring frequently.
  4. Once boiling, reduce the heat to a simmer and let cook for about 20-30 minutes, or until the mixture thickens to your desired consistency.
  5. If using fruit pectin, follow the instructions on the package for adding it at the appropriate time.
  6. Remove from heat and stir in the vanilla extract.
  7. Pour the hot jam into sterilized jars, leaving about 1/4 inch headspace. Wipe the rims of the jars with a clean cloth.
  8. Seal the jars with lids and process in a boiling water bath for 10 minutes to ensure proper sealing.
  9. Let the jam cool completely before storing in the refrigerator or pantry.
