Ingredients

- 1 lb beef tripe, cleaned and cut into strips
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon black peppercorns
- 1 teaspoon dried marjoram
- 6 cups beef broth
- Salt to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, combine the beef tripe, onion, carrots, celery, garlic, bay leaf, black peppercorns, and marjoram.
- Pour in the beef broth and bring the mixture to a boil.
- Reduce heat to low and simmer for about 2 hours, or until the tripe is tender.
- Season with salt to taste.
- Remove the bay leaf and serve hot, garnished with fresh parsley.
