A traditional Persian dish, Fesenjan is a rich, flavorful stew made with chicken, ground walnuts, and pomegranate molasses. It’s a perfect blend of sweet and savory, often served over rice.

- 4 pieces Chicken thighs
- 2 cups Walnuts
- 1 cup Pomegranate molasses
- 1 large Onion
- 1 teaspoon Turmeric
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/2 teaspoon Cinnamon
- 2 cups Chicken broth
- 2 tablespoons Olive oil
- 1/2 cup Fresh pomegranate seeds
- 1/4 cup Fresh parsley
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the chicken thighs to the pot and brown on all sides.
- Stir in the turmeric, salt, black pepper, and cinnamon, cooking for another minute.
- Add the ground walnuts and chicken broth, stirring well to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 30 minutes, covered.
- Stir in the pomegranate molasses and continue to simmer for another 30 minutes, uncovered, until the sauce thickens.
- Taste and adjust seasoning if necessary.
- Serve the Fesenjan over rice, garnished with fresh pomegranate seeds and chopped parsley.
