Description

A traditional Persian dish, Fesenjan is a rich, flavorful stew made with chicken, ground walnuts, and pomegranate molasses. It’s a perfect blend of sweet and savory, often served over rice.


Ingredients

  • 4 pieces Chicken thighs
  • 2 cups Walnuts
  • 1 cup Pomegranate molasses
  • 1 large Onion
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Cinnamon
  • 2 cups Chicken broth
  • 2 tablespoons Olive oil
  • 1/2 cup Fresh pomegranate seeds
  • 1/4 cup Fresh parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the chicken thighs to the pot and brown on all sides.
  3. Stir in the turmeric, salt, black pepper, and cinnamon, cooking for another minute.
  4. Add the ground walnuts and chicken broth, stirring well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for about 30 minutes, covered.
  6. Stir in the pomegranate molasses and continue to simmer for another 30 minutes, uncovered, until the sauce thickens.
  7. Taste and adjust seasoning if necessary.
  8. Serve the Fesenjan over rice, garnished with fresh pomegranate seeds and chopped parsley.
