Description

Delicious homemade potato and cheese pierogi, filled with creamy mashed potatoes and cheese, and served with sour cream or fried onions.


Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 cup water (more as needed)
  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar or farmer’s cheese recommended)
  • 1 tablespoon butter
  • Sour cream for serving
  • Chopped onions for garnish (optional)

Instructions

  1. In a large bowl, mix the flour and salt. Make a well in the center and add the egg and water gradually, mixing until a soft dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a towel and let it rest for 30 minutes.
  3. In a separate bowl, combine the mashed potatoes and shredded cheese. Mix until well combined. Season with salt and pepper to taste.
  4. Roll out the dough on a floured surface to about 1/8 inch thick. Use a round cutter or glass to cut out circles.
  5. Place a spoonful of the potato and cheese filling in the center of each circle. Fold the dough over and pinch the edges to seal tightly.
  6. Bring a large pot of salted water to a boil. Drop the pierogi in batches and cook until they float to the top, about 3-5 minutes.
  7. Remove with a slotted spoon and set aside. In a skillet, melt butter and fry the cooked pierogi until golden brown on both sides.
  8. Serve hot with sour cream and garnished with chopped onions if desired.

Notes

  • You can freeze uncooked pierogi for later use. Just place them in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag.
  • Feel free to add herbs like chives or parsley to the filling for extra flavor.
  • For a richer flavor, you can use a combination of cheeses.
