Description

Ingredients

  • 1 onion, chopped

  • 4 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add potatoes and cauliflower, stir for a few minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes.
  6. Puree the soup until smooth.
  7. Stir in milk, and heat through.
  8. Season with salt and pepper.
