Ingredients

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onion and carrots, sauté until softened.
  3. Add diced potatoes and vegetable broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. Stir in milk and cheese, cooking until cheese is melted.
  6. Season with salt and pepper to taste.
