Description
A creamy and hearty potato corn soup that warms you up.
Ingredients

- 4 medium potatoes, peeled and diced
- 2 cups corn kernels (fresh or frozen)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, and sauté until softened.
- Add potatoes and corn, stirring to combine.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Blend the soup until smooth, using an immersion blender or in batches.
- Stir in heavy cream and season with salt and pepper.
- Heat through and serve hot.

- Adjust thickness by adding more broth or cream.
- Top with fresh herbs for added flavor.
