- 2 lbs Potatoes (Russet or Yukon Gold recommended)
- 1 cup All-purpose flour (Adjust as needed for dough consistency)
- 1 Egg (Lightly beaten)
- 1 tsp Salt
- 1/2 tsp Ground black pepper
- 1 cup Beef cracklings (Crisp and chopped)
- 2 tbsp Butter (For sautéing)
- to taste Fresh herbs (Optional for garnish)
Instructions
- Boil the potatoes in salted water until tender. Drain and let cool slightly.
- Peel the potatoes and mash them until smooth.
- In a mixing bowl, combine the mashed potatoes, flour, egg, salt, and pepper. Mix until a dough forms.
- Divide the dough into small pieces and shape them into dumplings.
- Bring a large pot of salted water to a boil. Drop in the dumplings and cook until they float to the surface, about 3-5 minutes.
- In a skillet, melt the butter over medium heat. Add the beef cracklings and sauté until crispy.
- Drain the dumplings and add them to the skillet with the cracklings. Toss gently to coat.
- Serve warm, garnished with fresh herbs if desired.
