Ingredients

  • 2 lbs Potatoes (Russet or Yukon Gold recommended)
  • 1 cup All-purpose flour (Adjust as needed for dough consistency)
  • 1 Egg (Lightly beaten)
  • 1 tsp Salt
  • 1/2 tsp Ground black pepper
  • 1 cup Beef cracklings (Crisp and chopped)
  • 2 tbsp Butter (For sautéing)
  • to taste Fresh herbs (Optional for garnish)

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool slightly.
  2. Peel the potatoes and mash them until smooth.
  3. In a mixing bowl, combine the mashed potatoes, flour, egg, salt, and pepper. Mix until a dough forms.
  4. Divide the dough into small pieces and shape them into dumplings.
  5. Bring a large pot of salted water to a boil. Drop in the dumplings and cook until they float to the surface, about 3-5 minutes.
  6. In a skillet, melt the butter over medium heat. Add the beef cracklings and sauté until crispy.
  7. Drain the dumplings and add them to the skillet with the cracklings. Toss gently to coat.
  8. Serve warm, garnished with fresh herbs if desired.
