Ingredients

  • 4 medium potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying
  • Sour cream for serving
  • Chives or green onions for garnish (optional)

Instructions

  1. In a large bowl, combine the grated potatoes and chopped onion.
  2. Add eggs, flour, salt, and pepper to the mixture. Stir until well combined.
  3. Heat a skillet over medium heat and add enough oil to coat the bottom of the pan.
  4. Once the oil is hot, spoon a portion of the potato mixture into the skillet, flattening it slightly to form a pancake.
  5. Fry for 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  6. Repeat with the remaining mixture, adding more oil as needed.
  7. Serve hot with a generous dollop of sour cream and garnish with chives or green onions if desired.

  • For extra crispiness, squeeze out excess moisture from the grated potatoes using a clean kitchen towel.
