Ingredients

- 1 cup pitted dates
- 1/2 cup rolled oats
- 1/2 cup nut butter (almond or peanut)
- 1/4 cup protein powder (vanilla or chocolate)
- 1/4 cup chopped nuts or seeds (optional)
- 1/4 cup mini chocolate chips (optional)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a food processor, combine the pitted dates, rolled oats, nut butter, protein powder, vanilla extract, and salt.
- Blend until the mixture is well combined and sticky. If it’s too dry, add a teaspoon of water or more nut butter to help it stick together.
- Fold in the chopped nuts or seeds and mini chocolate chips if using.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Place the balls on a parchment-lined baking sheet.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to one week.
