Ingredients

  • 1 cup pitted dates
  • 1/2 cup rolled oats
  • 1/2 cup nut butter (almond or peanut)
  • 1/4 cup protein powder (vanilla or chocolate)
  • 1/4 cup chopped nuts or seeds (optional)
  • 1/4 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a food processor, combine the pitted dates, rolled oats, nut butter, protein powder, vanilla extract, and salt.
  2. Blend until the mixture is well combined and sticky. If it’s too dry, add a teaspoon of water or more nut butter to help it stick together.
  3. Fold in the chopped nuts or seeds and mini chocolate chips if using.
  4. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  5. Place the balls on a parchment-lined baking sheet.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to one week.
