- 1 cup peanut butter (unsweetened)
- 1/2 cup protein powder (vanilla or chocolate)
- 1/4 cup honey or maple syrup
- 1/4 cup rolled oats
- 1 tsp vanilla extract
- 1/4 cup dark chocolate chips (optional for coating)
- 1 tsp coconut oil (optional for coating)
Instructions
- In a bowl, mix peanut butter, protein powder, honey, rolled oats, and vanilla extract until well combined.
- Roll the mixture into small balls (about 1-inch diameter).
- If coating with chocolate, melt dark chocolate chips and coconut oil together. Dip each truffle into the melted chocolate and place on parchment paper.
- Refrigerate for 30 minutes to set.
- Store in an airtight container in the fridge for up to a week.
Notes
- Use natural peanut butter without added sugar for best results.
- Adjust sweetness by adding more or less honey.
- For a nut-free version, use sunflower seed butter.
