Ingredients

  • 1 cup chickpeas, soaked and cooked
  • 1 cup paneer, cubed
  • 1 cup spinach, chopped
  • 1 medium onion, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for another minute until fragrant.
  3. Stir in the pureed tomatoes and cook until the oil separates from the mixture.
  4. Add the turmeric, coriander powder, and salt. Mix well.
  5. Add the cooked chickpeas and paneer cubes to the pan. Mix well to coat with the spices.
  6. Pour in a little water to achieve desired consistency, then bring to a simmer.
  7. Add the chopped spinach and cook until wilted.
  8. Finish with garam masala and stir well.
  9. Garnish with fresh cilantro and serve hot with rice or flatbreads.
