Ingredients

- 2 tbsp melted butter
- 1 tbsp sweetener (e.g., erythritol)
- 8 oz cream cheese, softened
- 1/2 cup Greek yogurt
- 1/4 cup protein powder (vanilla or unflavored)
- 2 tbsp sweetener
- 1 tsp vanilla extract
- 1/2 cup fresh strawberries, diced
Instructions
- Preheat oven to 325°F (160°C).
- Mix almond flour, melted butter, and sweetener to form the crust. Press into mini muffin tins.
- Bake crust for 8 minutes, then let cool.
- Blend cream cheese, Greek yogurt, protein powder, sweetener, and vanilla until smooth.
- Fold in diced strawberries.
- Spoon filling into crusts and refrigerate for 2 hours.
Notes
- Use a piping bag for neat filling.
- Store in the fridge for up to 3 days.
