Ingredients

  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 cup pumpkin puree
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mix bananas, pumpkin, coconut oil, maple syrup, eggs, and vanilla.
  3. In another bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Combine wet and dry ingredients. Fold in chocolate chips.
  5. Pour batter into the loaf pan. Bake for 55-60 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes before slicing.

Notes

  • Use ripe bananas for best sweetness.
  • Can substitute honey for maple syrup.
