- 1 cup mashed ripe bananas (about 2 medium)
- 1 cup pumpkin puree
- 1/2 cup melted coconut oil
- 1/2 cup maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, mix bananas, pumpkin, coconut oil, maple syrup, eggs, and vanilla.
- In another bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and ginger.
- Combine wet and dry ingredients. Fold in chocolate chips.
- Pour batter into the loaf pan. Bake for 55-60 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before slicing.
Notes
- Use ripe bananas for best sweetness.
- Can substitute honey for maple syrup.
- Store in an airtight container for up to 5 days.
