- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1 cup canned pumpkin puree
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Set aside.
- In a large bowl, beat together granulated sugar, brown sugar, and vegetable oil until well combined.
- Add the pumpkin puree, eggs, and vanilla extract to the sugar mixture and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan before frosting.
Notes
- For the cream cheese frosting, beat together 8 oz cream cheese, 1/2 cup butter, 4 cups powdered sugar, and 1 teaspoon vanilla extract until smooth and creamy.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
