Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 egg yolk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl, mix together pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a separate bowl, beat together softened cream cheese, powdered sugar, and egg yolk until smooth.
  6. Pour half of the pumpkin batter into the prepared baking pan and spread evenly.
  7. Dollop the cream cheese mixture over the pumpkin batter and swirl with a knife.
  8. Pour the remaining pumpkin batter on top and spread evenly.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan before cutting into squares and serving.

Notes

  • For an extra touch, sprinkle some chopped nuts or chocolate chips on top before baking.
  • These brownies can be stored in an airtight container in the fridge for up to a week.
