Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1/3 cup water
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Purple food coloring
  • 1 cup cream cheese frosting

Instructions

  1. Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
  2. Beat eggs until thick and pale yellow (about 5 minutes). Gradually add sugar, water, and vanilla.
  3. Sift together flour, cocoa powder, baking powder, and salt. Fold into egg mixture.
  4. Add purple food coloring until desired shade is achieved.
  5. Spread batter evenly in prepared pan. Bake for 12-15 minutes.
  6. Turn cake onto clean towel dusted with powdered sugar. Roll cake and towel together while warm.
  7. Cool completely. Unroll, spread frosting, and reroll without towel.
