- 2 medium Zucchini Noodles
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 cup Cherry Tomatoes
- 2 cups Spinach
- 1 cup Grilled Chicken Breast
- 1/4 cup Parmesan Cheese

Instructions
- Spiralize the zucchini to create noodles and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté for 1 minute.
- Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.
- Stir in the spinach and cook until wilted.
- Add zucchini noodles to the skillet and toss to combine.
- Add cooked grilled chicken breast, salt, and pepper to taste.
- Cook for an additional 2-3 minutes until heated through.
- Serve topped with grated Parmesan cheese.
Notes
- You can substitute zucchini noodles with spaghetti squash for a different texture.
- Feel free to add other low carb vegetables like bell peppers or mushrooms.
