Ingredients

  • 2 chicken breasts
  • 1 tablespoon of soy sauce

Instructions

  1. Rinse the rice under cold water.
  2. In a pot, combine rice, water, olive oil, and salt.
  3. Bring to a boil and then reduce heat, cover, and simmer for 15 minutes.
  4. In a skillet, cook chicken breasts until golden brown.
  5. Add mixed vegetables and soy sauce to the skillet.
  6. Stir everything together and cook for 5 more minutes.
  7. Serve chicken and vegetables over rice.
