- 6 large eggs
- 1/4 cup milk
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup chopped spinach
- 1/4 cup chopped fresh basil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, whisk together eggs, milk, Parmesan, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add onion and bell pepper, cook until soft (about 5 minutes).
- Stir in spinach and basil, cook for 1 minute.
- Pour the egg mixture into the skillet, stir gently.
- Transfer the skillet to the oven and bake for 15-18 minutes until set.
- Let it cool slightly before slicing and serving.
Notes
- Use any vegetables you prefer.
- Add cooked meat like sausage or bacon if desired.
- Store leftovers in the fridge for up to 3 days.
