Ingredients

  • 2 cups vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 cup frozen peas

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add vegetable broth, carrots, celery, onion, and garlic.
  3. Season with salt, pepper, and thyme.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. In the last 30 minutes, add frozen peas.
  6. Shred chicken before serving.

  • Serve with bread or over rice.
