Ingredients

  • 2 large whole wheat tortillas
  • 1 cup chopped romaine lettuce
  • 1/2 cup diced cucumber
  • 1/2 cup sliced cherry tomatoes
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 2 tbsp hummus
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Lay out the tortillas on a clean surface.
  2. Spread 1 tbsp of hummus on each tortilla.
  3. Layer the lettuce, cucumber, tomatoes, and red onion evenly on each tortilla.
  4. Sprinkle feta cheese over the vegetables.
  5. Drizzle with olive oil and lemon juice.
  6. Season with oregano, salt, and pepper.
  7. Roll up the tortillas tightly and cut in half.
  8. Serve immediately or wrap for later.
