Instructions
- In a large bowl, combine quinoa, cherry tomatoes, cucumber, feta cheese, olives, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss gently.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
