Ingredients

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring the vegetable broth to a boil.
  3. Add the quinoa to the boiling broth and reduce heat to low.
  4. Cover and simmer for about 15 minutes until the quinoa is fluffy.
  5. In a large bowl, combine black beans, corn, and diced bell pepper.
  6. Add the cooked quinoa to the bowl and mix well.
  7. Drizzle lime juice over the mixture.
  8. Season with salt and pepper to taste.
  9. Top with sliced avocado before serving.
