Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 avocado, sliced
- 1 lime, juiced
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring the vegetable broth to a boil.
- Add the quinoa to the boiling broth and reduce heat to low.
- Cover and simmer for about 15 minutes until the quinoa is fluffy.
- In a large bowl, combine black beans, corn, and diced bell pepper.
- Add the cooked quinoa to the bowl and mix well.
- Drizzle lime juice over the mixture.
- Season with salt and pepper to taste.
- Top with sliced avocado before serving.
Notes
- Feel free to add other vegetables.
- This meal can be served warm or cold.
- Store leftovers in an airtight container in the fridge.
