Instructions
- In a large mixing bowl, combine the rice cereal, peanut butter, and powdered sugar. Mix until well combined.
- Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Pour the melted chocolate over the rice cereal mixture and stir until fully coated.
- Using a cookie scoop or your hands, form small balls and place them on a parchment-lined baking sheet.
- Melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each cookie into the melted white chocolate, ensuring they are fully coated.
- Return the coated cookies to the parchment-lined baking sheet.
- If desired, melt the semi-sweet chocolate chips and drizzle over the coated cookies.
- Refrigerate the cookies for at least 30 minutes to set before serving.
