  • 4 cups yellow squash
  • 1 onion
  • 3 tablespoons butter
  • 1 cup breadcrumbs
  • 1 cup shredded cheese
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, melt butter over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the sliced yellow squash to the skillet and cook until softened, about 5-7 minutes.
  4. In a large bowl, combine the cooked squash mixture, beaten eggs, half of the breadcrumbs, shredded cheese, salt, black pepper, and garlic powder. Mix well.
  5. Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the remaining breadcrumbs on top.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
