- 4 cups yellow squash
- 1 onion
- 3 tablespoons butter
- 1 cup breadcrumbs
- 1 cup shredded cheese
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, melt butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the sliced yellow squash to the skillet and cook until softened, about 5-7 minutes.
- In a large bowl, combine the cooked squash mixture, beaten eggs, half of the breadcrumbs, shredded cheese, salt, black pepper, and garlic powder. Mix well.
- Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the remaining breadcrumbs on top.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
- Let cool slightly before serving. Enjoy your squash casserole!
