Ingredients

  • 6 6 medium apples, firm variety (Granny Smith or Fuji)
  • 1 1 cup (200g) coconut sugar
  • 1/4 1/4 cup (60ml) light maple syrup
  • 1/2 1/2 cup (120ml) water
  • 1/2 teaspoon 1/2 teaspoon red gel food coloring (optional)
  • 1/2 teaspoon 1/2 teaspoon cinnamon extract (optional)
  • 6 6 wooden candy apple sticks or sturdy lollipop sticks
  • as needed Non-stick cooking spray
  • as needed Parchment paper or silicone baking mat

Instructions

  1. Prepare your workspace by lining a baking sheet with parchment paper and coating it lightly with non-stick cooking spray.
  2. Remove the wax from the apples by dipping each in boiling water for 5 seconds, then scrub dry with a rough kitchen towel. Insert a wooden stick firmly into each apple.
  3. In a heavy-bottomed saucepan, combine coconut sugar, maple syrup, and water. Stir gently until the sugar is moistened.
  4. Bring the mixture to a rolling boil without stirring. Wipe down any sugar crystals clinging to the sides with a wet pastry brush.
  5. Continue boiling until the mixture reaches 300°F (149°C). This usually takes about 15-20 minutes.
  6. Remove from heat once it hits 300°F. Stir in the gel food coloring and cinnamon extract if using, and let it rest for 1-2 minutes until bubbles settle.
  7. Tilt the saucepan and dip each apple, letting the excess drip back into the pan. Place the coated apples stick-side up on the baking sheet.
  8. Allow to cool completely at room temperature for at least 20 minutes before serving.
