- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 8 oz semi-sweet chocolate, melted
Instructions
- In a bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for 10 minutes.
- In a large mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy.
- In another bowl, whip the heavy cream and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Stir in the melted chocolate until fully incorporated.
- Pour the chocolate filling into the crust and smooth the top with a spatula.
- Chill in the refrigerator for at least 4 hours or until set.
- Before serving, you can top with chocolate shavings or whipped cream if desired.
Notes
- Make sure the cream cheese is softened for easier mixing.
- Feel free to use any type of chocolate cookies for the crust.
- This cheesecake can be made a day in advance for convenience.
