Description

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit for 5 minutes.
  2. Fluff the quinoa with a fork and let it cool.
  3. In a large bowl, combine the black beans, corn, bell pepper, red onion, and cilantro.
  4. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  5. Add the cooled quinoa to the large bowl and pour the dressing over the salad. Toss to combine.
  6. Serve chilled or at room temperature.
