  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup broccoli florets
  • 1 cup carrot, sliced
  • 1 cup snap peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until quinoa is fluffy and liquid is absorbed.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  3. Add bell pepper, broccoli, carrot, and snap peas to the skillet. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. Stir in cooked quinoa, soy sauce, and sesame oil. Mix until well combined and heated through. Season with salt and pepper to taste.
