Description

A traditional Ukrainian soup made with beets, served with delicious dumplings. Perfectly hearty and comforting!


Ingredients

  • 4 medium beets
  • 1 small head cabbage
  • 2 medium carrots
  • 1 large onion
  • 2 medium potatoes
  • 6 cups vegetable broth
  • 2 tablespoons apple cider vinegar
  • 2 bay leaves
  • to taste salt
  • to taste black pepper
  • for garnish fresh dill
  • 2 cups dumplings

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Add the diced onion and sauté until translucent.
  2. Add the grated beets, diced carrots, and potatoes to the pot. Stir and cook for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Add the shredded cabbage, bay leaves, apple cider vinegar, salt, and black pepper.
  4. Reduce the heat and let the soup simmer for about 30 minutes, or until the vegetables are tender.
  5. In the last 10 minutes of cooking, add the dumplings to the soup and cook according to package instructions or until they float to the top.
  6. Remove the bay leaves and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh dill.

Notes

  • For a richer flavor, you can add a tablespoon of sugar to balance the acidity.
  • Feel free to customize the dumplings to your taste, using different fillings or types.
