Description
A traditional Ukrainian soup made with beets, served with delicious dumplings. Perfectly hearty and comforting!
Ingredients

- 4 medium beets
- 1 small head cabbage
- 2 medium carrots
- 1 large onion
- 2 medium potatoes
- 6 cups vegetable broth
- 2 tablespoons apple cider vinegar
- 2 bay leaves
- to taste salt
- to taste black pepper
- for garnish fresh dill
- 2 cups dumplings
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the diced onion and sauté until translucent.
- Add the grated beets, diced carrots, and potatoes to the pot. Stir and cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil. Add the shredded cabbage, bay leaves, apple cider vinegar, salt, and black pepper.
- Reduce the heat and let the soup simmer for about 30 minutes, or until the vegetables are tender.
- In the last 10 minutes of cooking, add the dumplings to the soup and cook according to package instructions or until they float to the top.
- Remove the bay leaves and adjust seasoning if necessary.
- Serve hot, garnished with fresh dill.
Notes
- For a richer flavor, you can add a tablespoon of sugar to balance the acidity.
- Feel free to customize the dumplings to your taste, using different fillings or types.
