- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1 cup milk
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a bowl, combine the chopped rhubarb with 1/2 cup of sugar and set aside.
- In another bowl, mix together the remaining sugar, flour, salt, and nutmeg.
- Add the melted butter, eggs, milk, and vanilla extract to the dry ingredients and mix until well combined.
- Fold in the prepared rhubarb mixture gently.
- Pour the batter into the greased baking dish and spread evenly.
- Bake in the preheated oven for 35-40 minutes, or until the custard is set and the top is lightly golden.
- Allow to cool before slicing into bars. Serve chilled or at room temperature.
Notes
- For a sweeter taste, feel free to adjust the sugar according to your preference.
- These bars are best enjoyed within a few days but can be stored in the refrigerator for up to a week.
