Ingredients

  • 2 cups rhubarb, chopped
  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1 cup Greek yogurt
  • 1/2 cup honey or maple syrup (for custard)
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine the oats, almond flour, melted coconut oil, honey or maple syrup, and cinnamon. Mix until crumbly.
  3. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, whisk together the eggs, Greek yogurt, honey or maple syrup, cornstarch, and salt until smooth.
  5. Fold in the chopped rhubarb into the custard mixture.
  6. Pour the custard filling over the crust in the baking dish.
  7. Bake for 30-35 minutes or until the custard is set and lightly golden on top.
  8. Allow to cool completely in the pan before slicing into bars. Serve chilled or at room temperature.

Notes

  • Feel free to substitute the rhubarb with other fruits like strawberries or blueberries for a different flavor.
  • These bars can be stored in the refrigerator for up to a week.
