- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 2 large eggs
- 1 cup heavy cream
- 1 1/2 cups fresh rhubarb, chopped
- 1 cup granulated sugar (for filling)
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/4 cup cornstarch
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a mixing bowl, combine flour, 1/2 cup sugar, softened butter, salt, and baking powder. Mix until crumbly.
- Press the mixture into the bottom of the greased baking dish to form the crust.
- In another bowl, whisk together the eggs, heavy cream, 1 cup sugar, vanilla extract, almond extract, and cornstarch until smooth.
- Fold in the chopped rhubarb gently into the custard mixture.
- Pour the custard mixture over the crust in the baking dish.
- Bake for 45-50 minutes or until the custard is set and the top is lightly golden.
- Allow to cool completely before cutting into bars. Serve chilled or at room temperature.
Notes
- For a sweeter custard, adjust the sugar according to your taste.
- Serve with whipped cream or a scoop of vanilla ice cream for extra indulgence.
