  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 large eggs
  • 1 cup heavy cream
  • 1 1/2 cups fresh rhubarb, chopped
  • 1 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 cup cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a mixing bowl, combine flour, 1/2 cup sugar, softened butter, salt, and baking powder. Mix until crumbly.
  3. Press the mixture into the bottom of the greased baking dish to form the crust.
  4. In another bowl, whisk together the eggs, heavy cream, 1 cup sugar, vanilla extract, almond extract, and cornstarch until smooth.
  5. Fold in the chopped rhubarb gently into the custard mixture.
  6. Pour the custard mixture over the crust in the baking dish.
  7. Bake for 45-50 minutes or until the custard is set and the top is lightly golden.
  8. Allow to cool completely before cutting into bars. Serve chilled or at room temperature.

Notes

  • For a sweeter custard, adjust the sugar according to your taste.
  • Serve with whipped cream or a scoop of vanilla ice cream for extra indulgence.
