  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 2 cups chopped fresh rhubarb
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a mixing bowl, combine 1 1/2 cups flour, 1/2 cup sugar, softened butter, salt, and baking powder. Mix until crumbly.
  3. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
  4. In another bowl, whisk together the eggs, 1 cup sugar, 1/4 cup flour, and vanilla extract until smooth.
  5. Fold in the chopped rhubarb until evenly distributed.
  6. Pour the rhubarb custard filling over the crust in the baking dish.
  7. Bake in the preheated oven for 35-40 minutes, or until the custard is set and the top is lightly golden.
  8. Remove from the oven and let cool completely before cutting into bars.
  9. Dust with powdered sugar if desired before serving.

Notes

  • For best results, use fresh rhubarb. If using frozen, thaw and drain excess liquid.
  • These bars can be stored in the refrigerator for up to 3 days.
