- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon vanilla extract
- 2 cups chopped fresh rhubarb
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish.
- In a mixing bowl, combine 1 1/2 cups flour, 1/2 cup sugar, softened butter, salt, and baking powder. Mix until crumbly.
- Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
- In another bowl, whisk together the eggs, 1 cup sugar, 1/4 cup flour, and vanilla extract until smooth.
- Fold in the chopped rhubarb until evenly distributed.
- Pour the rhubarb custard filling over the crust in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the custard is set and the top is lightly golden.
- Remove from the oven and let cool completely before cutting into bars.
- Dust with powdered sugar if desired before serving.
Notes
- For best results, use fresh rhubarb. If using frozen, thaw and drain excess liquid.
- These bars can be stored in the refrigerator for up to 3 days.
