Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup butter (melted)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups rhubarb (chopped)
  • 1 cup milk
  • 2 tablespoons cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a medium bowl, mix together flour, sugar, melted butter, egg, vanilla extract, baking powder, and salt until well combined.
  3. Spread the mixture evenly into the bottom of the prepared baking dish and press down to create a crust.
  4. In another bowl, combine chopped rhubarb, milk, cornstarch, and remaining sugar. Pour this custard mixture over the crust.
  5. Bake in the preheated oven for 40-45 minutes or until the custard is set and lightly golden.
  6. Allow to cool before cutting into bars and serving.
