Deliciously tangy rhubarb custard bars with a creamy filling and a buttery crust.
Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup butter (melted)
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups rhubarb (chopped)
- 1 cup milk
- 2 tablespoons cornstarch
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a medium bowl, mix together flour, sugar, melted butter, egg, vanilla extract, baking powder, and salt until well combined.
- Spread the mixture evenly into the bottom of the prepared baking dish and press down to create a crust.
- In another bowl, combine chopped rhubarb, milk, cornstarch, and remaining sugar. Pour this custard mixture over the crust.
- Bake in the preheated oven for 40-45 minutes or until the custard is set and lightly golden.
- Allow to cool before cutting into bars and serving.
Notes
- Serve chilled or at room temperature for the best flavor.
- Store any leftovers in an airtight container in the refrigerator.
