- 1 cup all-purpose flour
- 1/2 cup butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup rhubarb, diced
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup all-purpose flour
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch square baking dish.
- In a mixing bowl, combine 1 cup flour, butter, 1/4 cup sugar, and salt. Mix until crumbly. Press the mixture into the bottom of the prepared baking dish.
- Bake the crust for about 15 minutes or until lightly golden.
- In another bowl, combine the diced rhubarb with 1/2 cup sugar, eggs, 1/4 cup flour, vanilla extract, and baking powder. Mix well.
- Pour the rhubarb mixture over the baked crust and spread evenly.
- Return to the oven and bake for an additional 25-30 minutes or until the custard is set and lightly browned.
- Allow to cool completely before cutting into bars.
Notes
- For added flavor, consider adding a pinch of nutmeg or cinnamon to the custard mixture.
