Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup rhubarb, diced
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch square baking dish.
  2. In a mixing bowl, combine 1 cup flour, butter, 1/4 cup sugar, and salt. Mix until crumbly. Press the mixture into the bottom of the prepared baking dish.
  3. Bake the crust for about 15 minutes or until lightly golden.
  4. In another bowl, combine the diced rhubarb with 1/2 cup sugar, eggs, 1/4 cup flour, vanilla extract, and baking powder. Mix well.
  5. Pour the rhubarb mixture over the baked crust and spread evenly.
  6. Return to the oven and bake for an additional 25-30 minutes or until the custard is set and lightly browned.
  7. Allow to cool completely before cutting into bars.
