  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped rhubarb
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a medium bowl, combine 1 1/2 cups flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared pan.
  3. Bake the crust for 15 minutes or until lightly golden. Remove from the oven and set aside.
  4. In another bowl, whisk together the granulated sugar, 2 tablespoons flour, and salt. Add the eggs and vanilla extract; mix until smooth.
  5. Fold in the chopped rhubarb and cinnamon (if using). Pour the custard mixture over the pre-baked crust.
  6. Bake for an additional 25-30 minutes, or until the custard is set and lightly golden on top.
  7. Allow to cool completely in the pan. Cut into squares and serve.
