These rhubarb custard bars have a creamy custard filling and a buttery crust, making them a delicious dessert perfect for spring.

- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups chopped rhubarb
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a medium bowl, combine 1 1/2 cups flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared pan.
- Bake the crust for 15 minutes or until lightly golden. Remove from the oven and set aside.
- In another bowl, whisk together the granulated sugar, 2 tablespoons flour, and salt. Add the eggs and vanilla extract; mix until smooth.
- Fold in the chopped rhubarb and cinnamon (if using). Pour the custard mixture over the pre-baked crust.
- Bake for an additional 25-30 minutes, or until the custard is set and lightly golden on top.
- Allow to cool completely in the pan. Cut into squares and serve.
Notes
- These bars are best served chilled or at room temperature.
- You can adjust the amount of rhubarb according to your taste; more rhubarb will result in a tangier flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
