- 1 bone-in rib roast (5–7 lbs)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary, chopped
- 2 sprigs fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (230°C).
- Rub the rib roast with olive oil, salt, and black pepper.
- Mix garlic, rosemary, and thyme; rub this mixture over the meat.
- Place the roast bone-side down on a roasting pan.
- Roast for 20 minutes at 450°F, then lower the temperature to 325°F (165°C).
- Continue roasting until the internal temperature reaches your desired doneness (130°F for medium-rare).
- Remove from the oven and let it rest for 15-20 minutes before slicing.
Notes
- Use a meat thermometer for accurate doneness.
- Resting the meat allows juices to redistribute.
- Adjust seasonings according to your taste.
