Ingredients

  • 34 lbs boneless rib roast
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup beef broth
  • 1 onion, sliced
  • 2 carrots, chopped
  • 2 potatoes, diced

Instructions

  1. Rub the rib roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
  2. Place the sliced onion, carrots, and potatoes at the bottom of the crock pot.
  3. Place the rib roast on top of the vegetables.
  4. Pour beef broth over the roast.
  5. Cover and cook on low for 8 hours or until tender.
  6. Remove the roast from the crock pot and let it rest for 10 minutes before slicing.
