Description
A simple and delicious boneless rib roast recipe made in a crock pot.
Ingredients
Scale
- 3–4 lbs boneless rib roast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 cup beef broth
- 1 onion, sliced
- 2 carrots, chopped
- 2 potatoes, diced
Instructions
- Rub the rib roast with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Place the sliced onion, carrots, and potatoes at the bottom of the crock pot.
- Place the rib roast on top of the vegetables.
- Pour beef broth over the roast.
- Cover and cook on low for 8 hours or until tender.
- Remove the roast from the crock pot and let it rest for 10 minutes before slicing.
Notes
- Adjust cooking time based on the size of the roast.
- Serve with the cooked vegetables for a complete meal.
- Store leftovers in an airtight container in the refrigerator.
