Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Mix olive oil, salt, pepper, garlic, rosemary, and thyme in a bowl.
  3. Rub the mixture all over the rib roast.
  4. Place the roast on a rack in a roasting pan.
  5. Roast for 20 minutes, then reduce temperature to 325°F (163°C).
  6. Continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare.
  7. Remove from oven and let it rest for 15-20 minutes before slicing.
