A simple and delicious boneless rib roast recipe cooked in the oven.
Ingredients

- 5 lb boneless rib roast
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Mix olive oil, salt, pepper, garlic, rosemary, and thyme in a bowl.
- Rub the mixture all over the rib roast.
- Place the roast on a rack in a roasting pan.
- Roast for 20 minutes, then reduce temperature to 325°F (163°C).
- Continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from oven and let it rest for 15-20 minutes before slicing.

- Adjust cooking time based on preferred doneness.
- Use a meat thermometer for accuracy.
- Let the roast rest to retain juices.
