- 1 rib roast (5–7 pounds)
- 3 tablespoons salt
- 2 tablespoons black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 450°F (232°C).
- In a small bowl, mix salt, pepper, garlic, rosemary, and olive oil.
- Rub the mixture all over the rib roast.
- Place the roast on a rack in a roasting pan.
- Roast in the oven for 20 minutes.
- Reduce the temperature to 325°F (163°C) and continue cooking for 1.5 to 2 hours, or until a meat thermometer reads 130°F (54°C) for medium-rare.
- Remove from oven and let it rest for 20 minutes before slicing.
