A simple and delicious rib roast recipe cooked in the oven.
Ingredients

- 1 rib roast (5–7 pounds)
- 2 tablespoons olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
Instructions
- Preheat your oven to 450°F (232°C).
- Mix olive oil, salt, pepper, garlic, rosemary, and thyme in a bowl.
- Rub the mixture all over the rib roast.
- Place the rib roast in a roasting pan bone-side down.
- Roast for 20 minutes at 450°F, then reduce the temperature to 325°F (163°C).
- Continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from oven and let it rest for 20 minutes before slicing.
Notes
- Adjust cooking time based on the size of the roast.
- Use a meat thermometer for best results.
- Let the roast rest to retain juices.
