Ingredients

- 1 cup brown rice
- 2 cups water
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon soy sauce
- 1/4 cup chopped green onions
Instructions
- Rinse the brown rice under cold water.
- In a pot, add water and rice. Bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes.
- In a pan, heat olive oil over medium heat.
- Add mixed vegetables, salt, and pepper. Sauté for 5-7 minutes.
- Once rice is cooked, fluff with a fork.
- Combine rice and vegetables. Stir in soy sauce and green onions.

- Feel free to add protein like chicken or tofu.
- Use any vegetables you prefer.
