Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add mixed vegetables and stir-fry for 3-4 minutes until tender.
- Push the vegetables to one side of the pan and crack the eggs into the empty side.
- Scramble the eggs and cook until fully set, then mix with the vegetables.
- Add the cooked rice to the pan and stir well, combining everything together.

- Season with salt and pepper to taste.
