Ingredients

  • 4 tbsp unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, halved
  • 1 onion, quartered

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix butter, garlic, rosemary, thyme, salt, and pepper in a bowl.
  3. Pat the chicken dry and rub the butter mixture under and over the skin.
  4. Stuff the cavity with lemon and onion.
  5. Place chicken on a roasting rack in a pan.
  6. Roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before carving.
