Description

A simple and delicious roast tomato soup made with fresh tomatoes and herbs.


Ingredients

  • 1.5 kg fresh tomatoes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 500 ml vegetable stock
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Cut the tomatoes in half and place them on a baking tray.
  3. Drizzle with olive oil and roast for 30 minutes.
  4. In a pot, sauté the onion and garlic until soft.
  5. Add the roasted tomatoes, herbs, and vegetable stock.
  6. Simmer for 20 minutes, then blend until smooth.
  7. Season with salt and pepper.
