Description
A simple and delicious roast tomato soup made with fresh tomatoes and herbs.
Ingredients

- 1.5 kg fresh tomatoes
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 500 ml vegetable stock
- Salt and pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Cut the tomatoes in half and place them on a baking tray.
- Drizzle with olive oil and roast for 30 minutes.
- In a pot, sauté the onion and garlic until soft.
- Add the roasted tomatoes, herbs, and vegetable stock.
- Simmer for 20 minutes, then blend until smooth.
- Season with salt and pepper.
Notes
- Use ripe tomatoes for the best flavor.
- Add a splash of cream for extra richness.
- Store leftovers in the fridge for up to 3 days.
