A comforting bowl of roasted garlic tomato soup served with crispy grilled cheese croutons for the ultimate flavor combination.

- 2 tablespoons olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 6 cloves of garlic, roasted
- 2 cans (28 oz each) crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup heavy cream (optional)
- 4 slices of bread
- 4 slices of cheese (cheddar or your choice)
- Butter for grilling
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery, and sauté until softened, about 5 minutes.
- Stir in the roasted garlic and cook for another minute until fragrant.
- Add the crushed tomatoes, vegetable broth, dried basil, and oregano. Bring to a simmer. Season with salt and pepper.
- Simmer for 20-25 minutes to let the flavors meld. If desired, stir in heavy cream for a richer soup.
- While the soup simmers, prepare grilled cheese croutons. Heat a skillet over medium heat.
- Butter one side of each slice of bread. Place cheese between two slices of bread, buttered sides out, and grill until golden brown and the cheese is melted.
- Remove from heat, let cool slightly, and cut into crouton-sized pieces.
- Serve the soup hot, topped with grilled cheese croutons.
Notes
- For added flavor, try using fresh herbs instead of dried.
- You can blend the soup for a smoother texture if preferred.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
