Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 6 cloves of garlic, roasted
  • 2 cans (28 oz each) crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup heavy cream (optional)
  • 4 slices of bread
  • 4 slices of cheese (cheddar or your choice)
  • Butter for grilling

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery, and sauté until softened, about 5 minutes.
  2. Stir in the roasted garlic and cook for another minute until fragrant.
  3. Add the crushed tomatoes, vegetable broth, dried basil, and oregano. Bring to a simmer. Season with salt and pepper.
  4. Simmer for 20-25 minutes to let the flavors meld. If desired, stir in heavy cream for a richer soup.
  5. While the soup simmers, prepare grilled cheese croutons. Heat a skillet over medium heat.
  6. Butter one side of each slice of bread. Place cheese between two slices of bread, buttered sides out, and grill until golden brown and the cheese is melted.
  7. Remove from heat, let cool slightly, and cut into crouton-sized pieces.
  8. Serve the soup hot, topped with grilled cheese croutons.

Notes

  • For added flavor, try using fresh herbs instead of dried.
  • You can blend the soup for a smoother texture if preferred.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
